MAKES 2 OR 3 SERVINGS
This creamy hummus is chickpea-free and made from sesame seeds and zucchini.
2 cups chopped peeled zucchini
1½ cups chopped red bell pepper
¾ cup raw tahini
½ cup fresh lemon juice
¼ cup olive oil
4 cloves garlic, peeled
2½ teaspoons sea salt
1½ teaspoons ground cumin
In a high speed blender, combine all of the ingredients and blend until smooth.
Viktoras Kulvinskas was born in Lithuania during World War II and eventually emigrated to the United States. Kulvinskas co-founded, with Ann Wigmore, the Hippocrates Health Institute in Boston in 1968. In 1975, he published Survival into the 21st Century: Planetary Healers Manual. It was an incredibly influential book in the raw food movement as it was the first to integrate environmental stewardship, activism, and self-sufficiency with the principles of raw foods.
