Tangy Pear Vinaigrette Salad
Half of a 15-ounce can pears, drained
1/2 cup white wine vinegar
1 tablespoon minced shallot or dried minced onion
1/4 teaspoon garlic powder
3 tablespoons honey
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 cup vegetable oil
1 teaspoon Dijon mustard
Lettuce or mixed greens
Apples, peeled and chopped
Pine nuts, toasted
Bacon, cooked and chopped
Grilled chicken, flank steak, or shrimp, for serving (optional)
1. Blend together all the dressing ingredients in a blender until smooth.
2. On individual plates, layer the salad ingredients. Drizzle with the dressing.
3. To make this a meal, serve topped with grilled chicken, grilled flank steak, or grilled or sauteed shrimp.
