Greek Pasta Salad
1/4 cup lemon juice
1 tablespoon Italian seasoning
1 clove garlic, minced
1/2 teaspoon salt
1/3 cup olive oil
6 to 8 ounces penne pasta, cooked, drained, and cooled
1 cup chopped English cucumber
1/2 cup sliced or chopped pitted black olives
1 cup drained marinated artichoke hearts
2 roasted red peppers, chopped
3/4 cup crumbled feta cheese
1. Whisk together the lemon juice, Italian seasoning, garlic, salt, and black pepper to taste. Drizzle in the oil while whisking to emulsify.
2. Toss all the remaining ingredients with the dressing. Chill for at least 1 hour before serving.
