The Life Plan Diet Recipe: Mazatlan Shrimp with Salsa

Serves 8

2 cups diced fresh tomatoes
1 cup chopped red bell pepper
1 cup chopped fresh cilantro
¼ cup diced onion
3 lbs fresh shrimp
1 tbs olive oil
Sea salt and pepper to taste

Directions: In a large bowl, mix together the diced tomatoes, chopped peppers, diced onion, and chopped cilantro. Season lightly with sea salt and black pepper. Let stand in refrigerator. Peel and devein the shrimp. Put olive oil in a large skillet and heat slightly over medium heat. Add shrimp all at once and cook until shrimp are just pink. Spoon salsa mixture over shrimp and serve.
