This quick combo uses watermelon, which is full of vitamins and, despite its sweetness, has a low GL thanks to its high water content. With feta and fresh pepper, the salad is a real summer sensation. Try it and see.
For the dressing
1 tablespoon balsamic vinegar
2 teaspoons Dijon mustard
1 garlic clove, crushed
1 tablespoon good olive oil
For the salad
2 pounds watermelon, cubed
7 ounces low-fat feta cheese, crumbled
1 red onion, thinly sliced
Handful fresh mint leaves, coarsely chopped
Freshly ground black pepper
Combine dressing ingredients. Assemble salad, toss with dressing, and serve.
