Spiced Chicken with Warm Lentils and Roasted Garlic

A hearty, tasty dish that’s good to eat with friends on a warm summer evening. Don’t be alarmed by the quantity of garlic—it softens and sweetens during cooking and adds an unctuous, squashy quality to proceedings.
For the marinade
1 teaspoon grated fresh ginger
118 1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon ground turmeric
Juice of a lemon
2 teaspoons olive oil
Salt and pepper
1 medium chicken (about 3 pounds)
1 head of garlic, sliced crosswise
4 ounces French green lentils, rinsed
2 tablespoons water
Generous handful of parsley, chopped
Generous handful of cilantro leaves, chopped
1 tablespoon snipped chives
Juice of half a lemon
Sea salt and freshly ground pepper
Whisk marinade ingredients together and rub into chicken, working under the skin. Refrigerate for 1 hour, or overnight if possible. Preheat oven to 350oF. Place chicken and garlic in a roasting pan and roast for 1 hour 10 minutes—or until the juices run clear. Remove garlic and chicken from oven and allow to rest on a separate plate, retaining the juices in the pan. While the chicken is cooking, place lentils in a saucepan, cover with water and boil; when cooked but still al dente, drain and rinse with cold water, drain again and add them to the roasting pan along with 2 tablespoons water. Heat through, scraping the pan for tasty, sticky bits on the base. Remove from heat and add herbs and lemon juice. Stir well, season, and serve in a generous mound with the carved or torn chicken (with skin removed) and soft garlic.
