12 strips bacon, cut in half
1/4 cup pure maple syrup
1/4 cup dark brown sugar
Cayenne pepper to taste

1. Brush both sides of the bacon with maple syrup and coat with brown sugar and cayenne pepper.

2. Smoke over indirect heat at 300 degrees for about 45 minutes until the bacon is crispy.
