1 ⁄4 pound bacon, diced
1 celery stalk, finely chopped
1 large carrot, peeled and finely chopped
1 (3-pound) chuck roast, trimmed of fat and cut into small cubes
2 large yellow onions, peeled and diced
6 cloves garlic, peeled and minced
6 small jalapeño peppers, seeded and diced
1 ⁄4 teaspoon salt
1 ⁄4 teaspoon freshly ground black pepper
4 tablespoons chili powder
1 teaspoon dried Mexican oregano
1 teaspoon ground cumin
1 teaspoon brown sugar
1 (28-ounce) can diced tomatoes
1 cup beef broth
1. Add all of the ingredients to the slow cooker in the order given and stir to combine. The liquid in your slow cooker should completely cover the meat and vegetables.
2. If additional liquid is needed, add more crushed tomatoes, broth, or some water. Cover and cook on low for 8 hours.
3. Taste for seasoning and add more chili powder if desired.
