Holy Guacamole: A Keto-Friendly Guac Recipe

New Year’s Eve is right around the corner, which means many appetizers are in your future. Lindsay Boyers, author of KETO SNACKS, shares a keto-friendly Guacamole recipe for you to bring to whatever party you’re at on December 31st!

Guacamole is a ketogenic diet staple. Eat it with some celery stalks, put it on top of your taco bowls, or spoon it right out of the bowl.

Ingredients:

  • 3 large avocados
  • Juice from 1 medium lime
  • 2 large Roma tomatoes, diced
  • 2 cloves garlic, minced
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped red onion
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Per Serving Calories: 186 | Fat: 14.1 g | Protein: 2.7 g | Sodium: 301 mg | Fiber: 7.8 g | Carbohydrates: 12.9 g | Net Carbohydrates: 5.1 g | Sugar: 2.1 g

Steps:

  1. Cut avocados in half lengthwise, remove the pits, and scoop them out of the skin and into a medium bowl. Add lime juice. Use a fork to mash avocado and lime together, leaving some chunks intact.
  2. 2. Add tomatoes, garlic, cilantro, onion, salt, and pepper. Mash with a fork until combined.

Amazing Avocado: About 77 percent of the calories in an avocado come from fat, which makes it one of the fattiest foods in the world. Ounce for ounce avocados also contain more potassium than bananas, so they’re especially beneficial during the initial stages of a ketogenic diet when you’re losing water weight and electrolytes.
