If you were lucky (or unfortunate) enough to grow up near one of those hamburger stands that look like a miniature castle, you know the appeal of small burgers. These are from The Fire Island Cookbook.
MAKES 8 SERVINGS
They are the perfect size to enjoy when you want the taste of a burger but don’t want to fill up on just one thing. We don’t cook ours on large griddles with steamed onions the way they do, but then again they don’t give you the option of blue cheese and bacon toppings.
2 pounds ground sirloin
2 teaspoons salt
2 teaspoons ground black pepper
8 slices thick-cut bacon
2 large onions, cut into 1/2-inchwide strips
8 teaspoons mayonnaise
16 slider buns or 4 regular hamburger buns, quartered
6 ounces crumbled blue cheese
1. Combine the beef, salt, and pepper and form sixteen 2-ounce patties.
2. In a large skillet, cook the bacon until crisp. Drain on paper towels. Add the onions to the bacon fat and cook until browned.
3. Preheat the grill to medium. Grill the burgers for 1 1/2 to 2 minutes per side for medium-rare.
4. Spread 1/2 teaspoon mayonnaise on the bottom half of each bun. Top with a burger, fried onions, crumbled blue cheese, and a half slice of bacon. Cover with the top half of the bun and secure with a toothpick.
