Deliciously Ella Recipe: Sugar-free Strawberry Jam

sugar-free strawberry jamMost store-bought jams are full of sugar, which is why this version is so amazing–all it contains is three tablespoons of honey. The magic ingredient, chia seeds, thickens up the mixture, giving it the perfect jam consistency. Note: In Deliciously Ella, I use standard-sized coffee mugs as a measurement tool, to make cooking as quick and easy as possible.

Makes 1 large jar

2 cups strawberries
3 tablespoons thick honey
2 tablespoons chia seeds

Chop the green ends off the strawberries and place the strawberries in a large saucepan with the honey, turn on the heat and allow them to cook for about 5 minutes until the strawberries are soft.

Mash the strawberries with a potato masher until the mix is quite smooth.

Add in the chia seeds and keep cooking the mix for 20 minutes, over low heat. Stir every 5 minutes or so.

Remove the pan from the heat and place the jam in a bowl. It will continue to thicken for a few minutes as it cools.

Store the jam in an airtight container in the fridge. It will stay delicious for about a week.
