Cacao & Date Caramel Bars Recipe

You’re going to love these guilt-free Cacao & Date Caramel Bars from JUNIOR BAKER. Dates are extremely health beneficial as they are packed with calcium, iron, potassium and much more. Top it off with a cacao topping and you’ve got the perfect dessert!


½ cup fresh dates, pitted
1 cup roasted almonds
1½ tablespoons coconut oil, melted
¼ teaspoon fine sea salt flakes

Date caramel
1 cup fresh dates, pitted
½ cup pure maple syrup
¹⁄³ cup natural crunchy peanut butter
¼ cup melted coconut oil

Cacao topping
¼ cup raw cacao powder
¼ cup melted coconut oil
2 teaspoons pure maple syrup

1. Line an 8-inch square pan with parchment paper.
2. Process dates, almonds, and coconut oil until smooth. Press mixture evenly onto the base of the pan. Refrigerate
for 1 hour or until set.
3. Make date caramel; spread mixture evenly over base mixture in pan. Freeze for 1 hour or until firm.
4. Make cacao topping. Working quickly, pour topping over date caramel mixture; sprinkle with salt. Refrigerate for 1 hour or until set.
5. Use a hot sharp knife to cut into 16 pieces.

Date caramel: Process ingredients for 2 minutes or until very smooth.

Cacao topping: Whisk ingredients in a medium bowl until smooth.

Nutritional count per piece: 16.2g total fat (8.8g saturated fat); 253 cal; 22.6g carbohydrate; 3.9g protein; 3.4g fiber

Tips: Make cacao topping just before you are ready to use it or it may begin to set. The bars will keep in an airtight container in the fridge for up to 1 week.
