17 Day Diet Recipe: Creamy Light Fettuccine Alfredo

4 cups whole-wheat fettuccine, uncooked
¼ cup Breakstone LiveActive cottage cheese
¼ cup plain non-fat Greek yogurt
¼ cup skim milk
½ cup fat-free grated white cheese, any type
2 teaspoons cornstarch
2 tablespoons cold water
½ teaspoon black pepper

In a large saucepan, cook the fettuccine according to the package directions, but do not use salt.

Drain the noodles. Return them to the saucepan. Add the cottage cheese, yogurt, skim milk, and ¼ cup of white grated cheese. Heat the mixture on low; stir well until everything is well blended.

In a small bowl, combine the cornstarch with 2 tablespoons of coldwater and stir well. Add to the Alfredo sauce. Stir until the sauce has thickened slightly. Divide the fettuccine among 4 plates; sprinkle with the remaining cheese and the black pepper. Makes 4 servings. Use on Cycles 3 to 4.
